Ingredients
- 1/2 pound elbow macaroni
- 3 tablespoons butter
- 3 tablespoons flour
- 1 tablespoon powdered mustard
- 3 cups milk
- 1/2 cup yellow onion, finely diced
- 1 bay leaf
- 1/2 teaspoon paprika
- 1 large egg
- 12 ounces sharp cheddar, shredded
- 1 teaspoon kosher salt
- Fresh black pepper
Topping:
- 3 tablespoons butter
- 1 cup panko bread crumbs
Directions
Preheat oven to 350 degrees F.
In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
Remember to save leftovers for fried Macaroni and Cheese.

Breakfast Casserole
1 loaf of Italian Bread
1lb ground sausage
1 tsp. dried mustard
1 tsp salt
1 tsp pepper
8-12 eggs
1 cup milk
1 cup shredded cheese your choice I use Colby Jack
Preheat oven to 350. Spray or wipe your 9x13 baking pan with oil. Brown your sausage in a skillet.
Tear Italian bread into pieces in your baking pan then sprinkle your browned sausage over your bread,
make sure to spread out the sausage evenly. In a bowl mix your eggs, dry mustard, milk and salt and pepper;
Mix well and pour over your bread and sausage. Cover with foil and let set in your refrigerator overnight.
Bake at 350 for 35-40 mins or until cooked through. 15 mins before you take out your casserole sprinkle with cheese.
My kids love this for dinner!

Tastes better than it looks haha
Oven Roasted Broccoli

Ingredients
1 lb of broccoli, rinsed and trimmed
2 Tablespoons olive oil
2 cloves of garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/3 cup Panko bread crumbs (I used reg breadcrumbs I make myself)
1/4 cup finely grated paramesan or sharp cheddar cheese ( I used regular kraft finely shredded cheddar cheese)
Directions
Preheat oven to 425 degrees F
Cut the broccoli florets into bite size pieces. Cut the stalk into 1/8 inch thick, round slices. Place the broccoli into a mixing bowl and toss with the olive oil, garlic,kosher salt and pepper and set aside.
Spread the panko into a 13X9 inch metal cake pan and place into the oven for 2 minutes or until lightly toasted. Remove the panko from the oven and add to the bowl with the broccoli mixture. Toss to combine. Return the mixture to the cake pan, place in the oven and roast just until the broccoli is tender, 8-10 minutes. Remove from the oven,toss in the cheese and serve immediately.
Note: Do not walk away from the panko or bread crumbs while they are toasting they get toasted very fast and will burn.
