Share Ok so tonight I was inspired to cook something new and off the top of my head. There was a few things that I got on sale with coupons and I was in mad scientist mode. I have done this a few times sometimes they are good sometimes not so good, hey I am human but tonight it turned out not so bad. Here is my list. I named it Italian Chicken if you can think of a better name leave me a comment if you try this leave me a comment. Small bag of Baby Spinach 9 Chicken Thighs 2 Green Peppers Chopped 1 Large Onion Chopped 3 Cloves of Garlic minced 2 Cans of Diced Tomatoes Salt,Pepper and some Dried Italian Herbs 3tbls. Olive oil Shredded Mozzarella Cheese
I brown the chicken in the skillet about 10 minutes on each side on med high heat with some Olive oil salt and pepper it well,
I take out the chicken and set it aside drain the oil leaving behind just enough for the peppers,onions and garlic then add some of the dried herbs cook until tender try not to burn the garlic.
then add your 2 cans of diced tomatoes then the baby spinach let it simmer till the spinach is lightly wilted then add your chicken thighs.
I simmered these on medium high covered for about 20 minutes. After they were finished I plated them with a bit of mozzarella cheese and wow this was sooo good sometimes I sure do surprise myself. The hubby and kids liked it and would like to have it again. *Pats self on the shoulder*. The final result pay no mind to the messy plate hubby grabbed the camera before I could or it would have looked a little less messy.
